Time for a revamp of my small batch blondies recipe. Naturally I had to add brown butter. This recipe is made in a loaf tin, so save us from ourselves and stop us eating a whole 16 blondies to ourselves. But no judgement here if that happens! Enjoy, R x

Small Batch Blondies
Hurray for another small batch recipe. I’m a big fan of scaling recipes down since the start of the pandemic. Amazing how versatile the loaf tin is really. Also a big fan of blondies, so about time I scaled these down. The caramelly flavours of blondies work so well with dark chocolate chips and pecans. […]
Apple Streusel Slices
Another small batch recipe. A cross between apple pie and crumble. Shortbread base, diced cinnamon apple layer topped with streusel. This recipe took me a while to get right. Might not be the prettiest thing I’ve ever baked, but these slices are delicious! Enjoy, R x
Mini Biscoff Cheesecakes
No-bake individual mini Biscoff cheesecakes. Delicious and simple to make. A Biscoff biscuit base, with a creamy Biscoff filling and even more on top. I’m trying to stick to the small batch baking (or in this case no-bake) theme, as even though we’re now in 2021, we’re still in lockdown. But I don’t want lockdown […]
Small-Batch Cinnamon Rolls
Nothing quite like waking up to a warm cinnamon roll on a weekend morning. These cinnamon rolls are prepared the night before and the recipe makes 3/4 cinnamon rolls – perfect for a couple/small family. Most cinnamon roll recipes make 12. Now don’t get me wrong, I love them, but when you’re not feeding a […]
Small Batch Chocolate Brownies aka EMERGENCY BROWNIES
Everyone loves a brownie. And sometimes you just need one, and you need it ASAP. Welcome my small batch brownie recipe. Eight gooey, dense chocolate chip brownies, that are ready within an hour. These are so decadent, but it’s hard to believe how easy they are to put together. I am all for sharing baked […]
