Everyone loves a brownie. And sometimes you just need one, and you need it ASAP. Welcome my small batch brownie recipe. Eight gooey, dense chocolate chip brownies, that are ready within an hour. These are so decadent, but it’s hard to believe how easy they are to put together.
I am all for sharing baked goods with friends and family, but given recent events, sharing your baked goods has become tougher. Most brownies recipes are written to feed the masses, but this recipe is more suitable for one household. Or when you’re in need of an emergency brownie. It helps the only equipment you need is one bowl and a loaf tin. Easy peasy!!

Small Batch Chocolate Brownies
Ingredients
- 80 g dark chocolate
- 80 g butter I used unsalted, but salted works well in brownies
- 100 g caster sugar brown will also work
- 1 large egg
- 50 g plain flour
- 10 g cocoa powder or more flour
- 50 g chocolate chips or chopped chocolate
- pinch flakey salt Maldon FTW
Instructions
- Line a loaf tin with greaseproof paper. I used a 2lb loaf tin, but a 1lb will also work, your brownies will just be a bit thicker, so watch your baking time later on.
- Preheat your oven to 180°C/160°C fan.
- In a heatproof bowl melt the butter and 80g of chocolate. Do this in the microwave in 30 second bursts with lots of stirring.
- In another bowl beat the sugar and egg until paler in colour. Stir through the melted chocolate mix. Sprinkle over the flour and cocoa powder and mix until just combined. Finally, mix through the chocolate chips.
- Pour into your prepared tin and put in the oven. Bake for 18-22 minutes. You want them to look a bit wobbly in the centre still, but set around the edges. Brownies are better underdone than overdone! They'll continue to cook after you take them out of the oven. Sprinkle them with some flaky salt while they're still warm.
- Allow to cool in the tin before slicing.
