OREO BROOKIES

What a recipe for my first post. SLUTTY BROWNIES. These bars have a layer of chewy chocolate chip cookie, followed by an Oreo centre and topped with white chocolate chip brownies. What’s not to like?!

For the cookie layer, I used a hybrid of Ravneet Gill’s cookie recipe and the viral New York Times Chocolate Chip Cookie recipe. Leaving the cookie dough overnight ensure the cookie layer stays gooey. You don’t want this layer to be too crunchy – save the crunch for the Oreos!

Slutty Brownies

Chewy chocolate chip cookie, Oreos, and a gooey chocolate brownie layer…

Ingredients

Cookie layer

  • 140 g unsalted butter softened
  • 140 g brown sugar light or dark
  • 110 g caster sugar
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp salt
  • 250 g plain flour
  • 170 g dark chocolate chopped into chunks is way better than chips

Oreo layer

  • 2 x 154g packs of Oreos

Brownie layer

  • 120 g dark chocolate
  • 120 g unsalted butter
  • 160 g caster sugar
  • 55 g plain flour
  • 25 g cocoa powder
  • good pinch salt
  • 100 g white chocolate chopped into chunks again

Instructions

  • Line a 9×9 inch tin with greaseproof paper. Food52 has a great how to here.

Let's make the cookie dough layer first

  • Cream the soft butter and sugars.
  • Add the egg and fully incorporate.
  • Next, add your dry ingredients; baking powder, bicarb of soda, salt and flour. And combine.
  • Lastly, fold through your chocolate chunks.
  • Press the cookie dough into your prepared tin in a nice, even layer, all the way out to the corners.
  • Put your tray in the fridge. Preferably overnight, but at least four hours. Means a chewier cookie layer.
  • Before we make the brownie layer, preheat your oven to 180°C/160°C fan.

Brownie layer

  • Melt the butter and chocolate together. I do this in short blasts in the microwave with lots of stirring. Allow to cool slightly.
  • In another bowl, beat the sugar and eggs.
  • Add your cooled chocolate mixture to your eggy mixture and combine carefully.
  • Finally, fold through your flour, cocoa, salt and chopped chocolate.

Let's put it all together

  • Get your chilled cookie dough from the fridge and arrange the Oreos across the whole surface as tightly as you can.
  • Pour over your brownie mixture. Make sure to spread it carefully all over without disturbing the Oreos.
  • We're ready to bake! Put it in your preheated oven for 20-25 minutes. You want the surface to be set, but still be gooey inside.
  • Let them cool completely. I know it's hard. I even fridge mine overnight. If you cut them while they're warm, they'll fall apart. Will be a delicious mess all the same.

Notes

  • Resting the cookie dough isn’t entirely essential, but I think it always results in a much more tender cookie crumb. If you decide to not rest the dough for four hours, please pop it in the freezer for 30 mins. Will prevent over baking later.
  • The good pinch of salt is non-negotiable IMO.
  • These will last five days (as if).
